Sunday afternoon, several folks of mine decided to treat ourselves to a green barbecue of delicious foods. we recycled a spare terracotta pot from the garden instead of buying an expensive high-tech metal barbecue, and use charcoal from sustainably managed woodlands.  I had to say the whole garden pot barbecue idea is awesome. The barbecue is extremely delicious, sizzling and less smoky.

More than 90 per cent of our barbecue charcoal is imported, and much of it is likely to come from unsustainably managed tropical forests. By buying charcoal made from trees that have been coppiced (when trees and shrubs are trimmed back to produce a supply of thin poles) and thinned in woodlands, you are using sustainably produced fuel. Even better, if the charcoal is from a local producer, the carbon dioxide emissions generated by transporting it from the producer to the store can be reduced by as much as 85 per cent compared with imported charcoal. As coppicing creates the right conditions for many plants that provide food for butterflies to flourish, you will be helping to conserve threatened species too. So look for charcoal bags that say “locally produced” or “home grown”.

My Mysterious Garden

Barbecuing using an empty clay pot couldn’t be easier. You’ll need a pot about 33cm (13in) in diameter to feed up to three people, a larger one for more people.

Stand the pot on a couple or bricks to allow air to circulate underneath the fire. Fill the pot half full with pebbles or crocks (broken clay pots), slightly more if it is tall.

Line the top part with kitchen foil and heap the charcoal in the centre. Use a proprietary barbecue lighter to light the coals.

When the coals are glowing red and have started to turn grey at the edges, spread them out evenly and balance an oven shelf or grill pan shelf over the rim of the pot.

Cook skewers of peppers, courgettes and mushrooms, or pieces of fish or meat, and throw a handful of rosemary, thyme or lavender on the fire for a hint of herby flavour as the skewers are cooking.
